I not sure what Indian food you thinking of, but 3 tblspns of oil for a dish to serve 4 is really not that much. Most Western food is oilier.
Chinese use sesame oil also, so not sure what part of India you are thinking of friend :)

In the water, we add crushed Garlic. Reserve the chana in water for half hour so that chana becomes blackish. Rest of the recipe is more or less the same. However we add in tempering ajwain and later ajwain powder as well. To finish, I normally add fried green chillies and a little clarified butter.
